Tonight's Supper

Well tonight's supper was a hit with Hubs and I...Wee-one not so much. I must admit that he did have a Kashi Breakfast Bar at around 4:30ish so maybe that had something to do with his not eating a good supper. Oh and the fact that he DID NOT and I repeat, DID NOT want to sit down at the dinner table tonight. Apparently playing with tractors is far more fun then, lets say...EATING :)! So yeah tonight I'm feeling a bit defeated and ready to throw in the towel and serve hot dogs and tator tots for supper every night starting tomorrow. I'm just being honest. But I'm not that kinda Mom. I'm just as stubborn as Wee-one (and apparently that's who he got this lovely trait from) so I'm not giving up. I'll keep on making healthy meals and maybe, just maybe he'll start eating them :)! Gotta be positive you know!

So tonight was breakfast for supper night at our house. I made a Sneaky Chef recipe called French Toast Rollers. I figured this would be a hit with Wee-one because he LOVES French Toast. Maybe it was the presentation or the reasons I listed above but he just wasn't interested. I think he took two bites of the French Toast Roller and he was done. Didn't eat his pork sausage or applesauce either. Of course when Hubs had a piece of Chocolate Chip Crumb Cake after supper, Wee-one was asking for some of that. We just told him that only people that eat their supper get cake. Thankfully he didn't throw a fit...he excepted it and went to play tractors again. However later at snack time he asked for some pudding and GASP...we are OUT OF PUDDING! He almost had a meltdown but Hubs told him to go to the grocery store and buy some. So Wee-one hopped on his Little Tikes toy tractor and proceeded to "go grocery shopping to buy some pudding". MELTDOWN AVERTED :)! WAY TO GO HUBS!!!

Ok so back to our supper tonight...sorry I get side-tracked sometimes...LOL :)! The French Toast Rollers were kind of a pain to make. I'm just telling it like it is people. I like easy to prepare things that only take a few minutes. This recipe was kind of tedious. First you had to mix up the egg wash to dip the rollers in, then make the "spreads" that go on the bread, flatten out all the bread with a rolling pin, spread the filling on the bread, roll them up, make sure they are sealed, dip them and cook them well on all sides. See what I mean...LOTS AND LOTS of steps. They were good though but I think I'll stick with our regular French Toast recipe from now on (even though that one doesn't contain the hidden veggies that the French Toast Rollers did).

Here is the recipe in case you want to try it yourself:

French Toast Rollers

2 lg. eggs
1/4 c. milk
1/4 tsp. each cinnamon and salt
1/2 tsp. pure vanilla extract
1 Tbsp. honey
3 Tbsp. Orange Puree (see recipe in previous post)
4 slices whole wheat bread
Powdered sugar, for dusting

Optional fillings:

1 Tbsp. peanut butter + 1 Tbsp. Orange Puree (or Strawberry puree..ask me for recipe if you want to do this one) or other fruit spread

1 mashed banana + 1 Tbsp. Orange Puree

1 Tbsp. cream cheese + Fruit spread

In a large shallow baking dish, whisk together the eggs, milk, cinnamon, salt, vanilla, honey and Orange puree. Set aside. Use a rolling pin to roll out each slice of bread on a cutting board until flattened. In a mixing bowl, mix the optional fillings. Spread about 2 Tbsp. of the filling mixture on each flattened slice of bread, keeping about 1/4 inch away from the edges. Roll up each slice of bread, pressing to seal the edges.

Dip each log roll in the egg mixture until saturated on all sides, then cook in a well greased skillet over moderate heat, turning to brown each side. Remove from heat and lightly dust with powdered sugar before serving. Serves 4

I also served syrup with these which added a bit more sweetness :). Again this was a hit with me and Hubs. Reminded us of Stuffed French Toast only in "stick" form. I made the peanut butter filling and used some Strawberry puree I had left over. I think Strawberry jam would have been good too. I also did the banana with the Strawberry puree. Feel free to experiment with the fillings. I think any type of fruit spread would be delicious. Hubs and I agreed that the peanut butter filling was the best though!

Tomorrow night I'm making another Sneaky Chef recipe. I told you I wasn't giving up...ha! It's a Mac 'n Cheese recipe so we'll see how that goes. I'm also making Hot dogs and some sort of veggie or fruit...not sure on that one yet. I'm hoping one of these recipes will make Wee-one go nuts and eat every last bite (hey a Mom can dream can't she?)! I also better restock my muffin supply in the freezer as it appears that Wee-one is not muffined out anymore. Better roast my pumpkins tomorrow and make some Pumpkin Muffins :)! Busy, busy, busy I tell ya'! I wouldn't have it any other way! So keep following along on my daily adventures. Good night!
