Yup I've been slacking off on my blogging responsibilities...ha! I guess there wasn't really anything too outstanding about anything I made last week. The Scalloped Potatoes and Ham that I thought would go over so well with Wee-one...didn't. I mean he ate them but not like "Holy cow I can't get enough of these" kinda eating them. The thing that went over the best was the Creamy Chicken and Wild Rice...he LOVED that. I'll have to post that recipe tonight. It's super easy and super delicious. I made some special "Birthday bars" for Hubs on Wednesday and everyone LOVED those of course. But then again what's not to love about Chocolate, marshmallows, rice krispies and peanut butter...and did I mention Chocolate :)! I'll post that recipe tonight too.

Menu for this Week....
I apologize for not posting this yesterday. I've started grocery shopping on Monday nights now so I don't have to take any time off from work on Monday mornings. So needless to say my menu's don't get done until Monday afternoon...ha! And after planning on what we were going to have for supper last night (Goulash because that's what I had all the ingredients for in the house before shopping) I had to change my menu because Wee-one had Goulash at daycare yesterday...ha :)! Never fails!
I had some left over spaghetti sauce waiting to be used up and some great big hamburger buns in the freezer so I made Pizza Burgers last night along with potato wedges and green beans. Wee-one had a "cheesy bun" since he's not a fan of hamburger (unless it's on spaghetti...which is kinda funny because I used leftover spaghetti sauce...LOL)!

Creamy Corn Chowder + Grilled Cheese = YUM!
Last night was the perfect night to enjoy soup. It appears that our "Indian Summer" is now over and we are back to reality with more November-like temperatures. I guess it couldn't last forever...ha! So being that it was only 45 degrees yesterday, soup sounded so warm and cozy! I love eating soup on nights like last night. Actually I've been known to eat supper in the middle of a heatwave in July too but we'll save that story for another time :)!
Creamy Corn Chowder is to prepare and "cook". There is some chopping involved but not so much that you wonder if it's truly worth it! Any hey if you have one of those handy dandy vegetable choppers it is a piece of cake (I have one but didn't use it...I like to chop veggies, what can I say). Hubs and I enjoyed the soup. Wee-one took a few bites and proclaimed he was "done" and that was without eating a bite of his grilled cheese too! He noticed there was corn (GASP) in the soup right away so I think that might have made up his mind right then and there not to eat it. However while I was enjoy a bowl for lunch this afternoon, Wee-one told me he wanted soup and "in my own bowl" too :)! And he ate every last drop I gave him. So I would say it was a hit. Maybe not at supper last night but it hit the spot today (for both of us). Oh and we saved his grilled cheese last night for his bedtime snack and he happily ate that at 8 p.m. Apparently he wasn't hungry at 6:00 like usual. So VICTORY is mine...LOL!!
I took pictures last night everyone...oh yes I did! I hope to continue doing that too. I think it'll add a nice touch to my blog. If you all have any more suggestions please feel free to let me know.
Here's the DELICIOUS recipe from last nights supper:

*6 slices of bacon, cut into 1-in. pieces
*1 med. onion, chopped
*2 stalks celery, chopped
*1 med. red bell pepper, chopped (I left this out...we are not huge fans of these in our soup)
*3 med. potatoes, diced
*1 (1lb.) bag frozen corn kernels, thawed
*1 tsp. dried thyme
*Salt and Pepper
*1/3 c. flour
*6 c. chicken broth
*1 bay leaf (I don't have any so I left this out)
*1 c. half-and-half
In a 4 quart soup pot, cook bacon over medium high heat, stirring until brown and crispy (about 5 minutes). Pour off all but 2 Tbsp. of fat.
Add onion, celery and bell pepper and cook, stirring, until softened, 4 to 5 minutes. Add potatoes, corn, thyme, salt and pepper. Stir to combine.
Sprinkle flour over mixture and stir until thickened and fragrant, about 3 minutes.
Slowly pour in broth, stirring constantly until smooth. Add bay leaf; bring to a boil. Reduce heat; simmer until potatoes are tender (about 25 minutes).
Remove bay leaf and stir in half-and-half. Cook until warmed through.
Yield: 8 servings
Served with Grilled Cheese and you have yourself one heck of a hearty meal :)!

Is French Toast really a French dish??
French toast...who came up with French toast? Is it really something French people eat? Can it really be considered "toast" since it wasn't placed in the toaster? Maybe I should use my Swagbucks toolbar and ask a few of these questions...ha! Inquiring minds want to know, well ok I want to know :)! Well whoever thought up French toast was a genius! A pure genius!
Wee-one LOVES French toast and that might be an understatement. I use to always make French toast on Sunday mornings but have kind of gotten out of that routine. Now I make it occasionally on Breakfast for Supper Wednesdays (and still some Sunday mornings). Wee-one actually prefers his French toast without syrup...SHOCKER I KNOW! Especially after his discovery of syrup on pancakes a few weeks back. He does like butter on there though. I made bacon last night too and didn't think Wee-one would try it. He tried it and LOVED that too!! I served up some of our homemade applesauce and he willingly tried 2 bites and was done. I was happy he tried it. So of course last nights supper was a success.
Here is my recipe for French toast:
French Toast:
7 pieces of bread
3 eggs
Milk
1 tsp. vanilla
Cinnamon
In a bowl whisk eggs and milk together. I usually just "dump" my milk in. I like my egg mixture to be a little less eggy and more milky. It's a personal preference so feel free to add as much milk as you want. Add vanilla to egg/milk mixture. Beat together. Pour on a plate. Sprinkle cinnamon on egg/milk mixture. Dip bread into egg wash. Soak both sides. Feel free to add more cinnamon as you go along dipping the bread. Place soaked bread on a skillet. Brown both sides. Serve with butter and syrup.
Super easy and super delicious! I love the touch of vanilla in there and I usually just dump that in there too..no measuring. This recipe can be adapted to you and your families tastes. ENJOY!

I was off work today and was able to clean my house really really good. I hope to keep it clean for at least today...sometimes that's a job in itself! Wee-one went to daycare to play with his friends (and I'm sure he had a lot more fun there then here with me cleaning). He's napping now and I might do the same...ha! Recipe of the Corn Chowder to come tomorrow :)! Have a great afternoon!

Toddler Approved!
Tuesday nights supper was again a SUCCESS! I made Chicken Rice Dinner. I figured since Wee-one LOVES him some chicken and LOVES him some rice that this dinner would be right up his alley! Yup...Mommy knows her boy :)! He was so excited about supper he could hardly contain himself! Now that's what I like to see!!
I was even able to fix supper while Wee-one was napping. I usually don't like doing that because Wee-one is a pretty light sleeper and his bedroom is right off the kitchen. But since he decided not to nap until 3:20 yesterday I had no choice. That was SUCCESSFUL too! He didn't wake up until 5:30 and by then dinner was about done cooking! I love meals that I can literally just throw together and pop in the oven...letting the oven do all the work! That's the way to do it. I was actually BORED yesterday afternoon after supper was made and in the oven and Wee-one slept. I know...that's rough isn't it! LOL!
This meal was so easy to put together and turned out beautifully! The only thing that takes a little time is browning the chicken in the skillet. Otherwise it's super duper easy!
Chicken Rice Dinner (www.tasteofhome.com)
1/2 c. all purpose flour
1 tsp. salt
1/2 tsp. pepper
10 bone-in chicken thighs (abt. 3 3/4lbs.)(I had 8 and that was perfect)
3 Tbsp. Canola oil
1 c. uncooked long grain rice
1/4 c. chopped onion
2 garlic cloves, minced (I used dried minced garlic...worked good)
1 can (4 oz.) mushroom stems and pieces, undrained
2 tsp. chicken bouillon granules (I used 2 chicken Bouillon cubes and that worked good too)
2 c. boiling water
Minced parsley, optional (didn't use)
In a large resealable plastic bag, combine flour, salt and pepper. Add chicken thighs, one at a time, and shake to coat. In a large skillet over medium heat, brown chicken in oil.
Place rice in an ungreased 9 x 13 in. baking dish. Sprinkle with onion and garlic; top with mushrooms. Dissolve bouillon in boiling water; pour over all. Place chicken on top.
Cover and bake at 350 for 1 hour or until a meat thermometer reads 180 degrees and rice is tender. Sprinkle with parsley if desired. Yields: 5 servings
Again so sorry I didn't take pictures of this meal. It was beautiful and oh so tasty! I also served corn and carrots (cooked together) and bread and butter. I mixed Wee-ones vegetables into the chicken and rice...so yes he actually did eat a few! Yup I'm kinda sneaky like that..well ok not real sneaky considering he could see the vegetables but he still ate them :)! This recipe is definitely a keeper!!
On a side note today is the first day since Daylight savings time ended that Wee-one has gone down for his nap at 2 like he did before we turned the clocks back!! He slept good last night too! Was up at 3:30 with a nightmare but I got him to bed after 15 minutes of cuddling and rocking. Wee-one then proceeded to sleep until 6:15! I hope we are on schedule again now. Looks promising :)! And his behavior is much improved the past few days too. After almost going crazy on Monday things have gotten better. Wee-one had a cold (well he still does) but we think he's finally starting to feel better. I am sure that is one of the reasons he was so "spirited" the past weekend. I hope things continue to go well..with the eating, sleeping and behavior!

Sausage Potato Bake (Monday's meal)
I would consider what we had last night to be a success. Wee-one ate most of what I had given him. He was more interested in the sausage last night then the potatoes which is a shocker because the kid usually can't get enough potatoes. Ha! Hubs and I liked it a lot. The recipe is straight forward and simple (which is wonderful). It's a hearty casserole and one that will stick to your ribs. I served broccoli and bread and butter with it. Of course Wee-one didn't really care for the broccoli. He was a good sport and humored me by eating one or two "trees" so I guess I consider that successful too :)! He didn't want any bread and butter which is typical too.
Feel free to add some extra veggies to this casserole. That was what some of the suggestions said on www.allrecipes.com. There were also a few suggestions to use other types of soups in this recipe. I stuck to the original and it did not disappoint! So here ya' go:

8 cups cubed potatoes
1 lb. smoked sausage, sliced (I used the kind that had the cheese in it also..YUM)
1 (10 3/4 oz.) can condensed cream of mushroom soup
1 (10 3/4 oz. ) can condensed vegetable beef soup
For the oven method: (which is what I did)
Preheat oven to 350 degrees.
In a 9x13 in. pan, combine the potatoes, sausage, mushroom soup and vegetable soup. Mix together well.
Bake at 350 for 1 1/2 hours.
For slow cooker:
Place the potatoes, sausage, mushroom soup and vegetable soup in slow cooker. Mix well. Cook on low setting for 6 to 8 hours.
If I would have been thinking I would have done mine in the slow cooker. Next time I make it I hope to do just that. I might try to add more vegetables and try other kinds of soup to see what I can come up with :)!
Tonight's supper was SUCCESSFUL and I can't wait to share that recipe with you tomorrow. I of course forgot to take pictures of the meal so I do apologize in advance for that. I'll try to remember to start taking them in the next few meals. Tomorrow night is French Toast night at our house...can't wait :)! Until tomorrow....good night!

Super Duper Easy...and Oh so DELICIOUS!
What I'm about to share with you is the most awesome, toddler recipe EVER! Seriously I have never seen Wee-one eat this well. Ok so I take that back...I have seen him eat this good but it's been A LONG TIME! I made this recipe on Saturday night and we had the leftovers on Sunday for supper. Wee-one LOVED it both times we ate it. He asked for more and more and more. It was INSANE!!!
I would suggest you run, not walk to the grocery store and buy the stuff you need to make this. Seriously you won't be disappointed.

1 c. fresh or frozen broccoli flowerets
2 Tbsp. butter
1 lb. skinless, boneless chicken breasts,, cut into 1 1/2" pieces
1 can (10 3/4 oz.) condensed Cream of Mushroom soup
1/2 c. milk
1/2 c. grated Parmesan cheese
1/4 tsp. black pepper
Prepare linguine according to package directions in 3-qt. saucepan. Add broccoli during last 4 minutes of cooking time. Drain well.
Heat butter in 10" skillet over medium heat. Add chicken and cook until well browned, stirring often.
Stir in soup, milk, cheese, black pepper and linguine mixture in skillet. Cook until mixture is hot and bubbling, stirring occasionally. Serve with additional Parmesan cheese.
Prep: 10 min. Cook: 20 min. Makes: 4 servings

For supper tonight we're having Chicken Rice Dinner. Oh and I'll post the recipe from last nights supper later tonight. I would suggest you run, not walk to the grocery store and buy the stuff you need to make this. Seriously you won't be disappointed.

Bad Bad Blogger...sorry everyone!
I apologize yet again for the lack of posts lately. I'm thinking that whoever decided that Daylight savings time was a good idea didn't have a toddler! Boy it threw us all for a loop. Needless to say I was in bed by 9 last night. Wee-one was up at 4:40 a.m. this morning and then refused to nap at his usual time. It's been a crazy few days at our house that's for sure. Things seem to be getting better...knock on wood. We shall see how tomorrow morning goes :)!
I made a really really good supper on Saturday night. Wee-one ate it right up. It was crazy. He had three...yes three helpings! I'll post the recipe tomorrow along with the recipe we had tonight. It was good...Hubs and I liked it. Wee-one had a few bites and enjoyed the sausage that was in it. He had a one track mind though. I happened to mention "cookie" to "bribe" (yes we do bribe our child...to a degree) him inside to eat supper. Of course Wee-one remembers EVERYTHING so needless to say he took one bite of casserole and proceeded to ask for a cookie. I had him take one more bite and then got him one. This ended up working out quite well however because he did eat more casserole after his cookie was gone. SCORE ONE FOR MOMMY!!!
I got my menu finished this afternoon (finally) while Wee-one was not napping in his crib. He was hanging out so I got it done real quick. I went grocery shopping tonight with a budget of $62.00. I spend around $50.00 and the only thing I didn't buy that was on my list was Bay Leaves (I just couldn't justify spending $4.00 on a jar of bay leaves...yes I am the queen of cheap)! I got everything else so I'm pretty proud of myself.

Unpredictability....
Unpredictability is the word of the day..ha! Actually it was the word of yesterday. Wee-one had a hair cut at 1 yesterday so we didn't come home from daycare right away. Apparently that set the tone for the rest of the afternoon. He was out of "routine" so needless to say he didn't want to nap in his crib yesterday. Well wait, I take that back. He napped in his crib for almost an hour and then decided that wouldn't do, proceeded to cry until I got him, and then napped while I rocked him for the next hour and a half. So that's the reason for not posting yesterday! I hope today goes better. He went down about 30 minutes earlier because he was up at 5:45 a.m. this morning. I think he was pretty tuckered out. Unpredictable is the life of a mother with a toddler...and I wouldn't have it any other way :)!!
We had Cinnamon Pumpkin Waffles for supper on Wednesday. Wee-one LOVED them. And you know what he really, really loves......SYRUP!! Oh my goodness the boy just can't get enough but we limited him to "just some". He was bouncing off the walls after supper and I think the syrup was the reason. It was funny yet kinda crazy that he was so "sugared". He was having a blast (and he slept good that night too...ha)!
I'm not going to lye...I used my Cinnamon Pumpkin Pancake recipe (from the 10/20 post) for the waffles I made the other night. I learned REAL QUICK like to spray the heck outta the waffle iron before making another waffle otherwise you get a hot, stuck mess! Lesson learned after the first waffle!! After that they turned out great and again Wee-one enjoyed them very much. I doubled the recipe so I had lots of leftovers for Hubs and Wee-one to eat for breakfast in the morning (I'm a peanut butter and jelly kinda-girl...or oatmeal..LOL)! We had scrambled eggs and fruit that night too. Wee-one, as you may have guessed, refused the mandarin oranges. The eggs on the other hand, seriously he snarfed those down like they were goin' outta style! The boy loves scrambled eggs too..what can I say :)!
Yesterday was Hubs and my 5 year wedding anniversary so to celebrate I made a frozen Three Cheese Tombstone Pizza! Let the celebration begin...ha! Hey Wee-one, Hubs and I enjoyed that pizza. I decided it was "cooks choice" and this cook didn't feel like cookin' last night. Tonight we'll have Chili (soup for Wee-one) and Grilled Cheese. I'm just pushing back my menu by a day. Sounds like a plan to me!
I was told that to enhance my blog maybe to add pictures of what I make every night. I have no problem doing that. I will start next Monday. I just hope my camera will cooperate. It's about on it's last leg...I am saving all my money for a new one :)! So stay tune next week for pictures of my suppers :)!

Last Nights Supper & a BONUS recipe :)
I made Spinach Lasagna Roll-Ups last night. Wee-one has eaten these in the past...HAS EATEN being the key words. Last night he wouldn't even TRY a bite! Of course that might have something to do with the fact that he had 1/2 a pudding cup, a slice of cheese and a bite of biscuit at 5:00. Yes I know...I still haven't learned! LOL! I needed to make supper and I needed to keep him happy so yes I fed him some snacks. He ate Goldfish crackers for a bedtime snack later too :)! Hubs and I enjoyed the Roll-ups. There are a few left-over too so that'll make good lunch for both of us for the next few days.
Wee-one was not acting like himself last night either so before bath time I took his temp. He had a slight fever (100.6) so we gave him a bath and some Motrin. He was like himself as soon as the Motrin kicked in. By the time he went to bed his forehead was cold. This a.m. we took his temp again and it was normal. So I'm not sure if I didn't get a good temperature reading last night or what. But I could tell by his behavior that he wasn't feeling the greatest. He just wasn't my happy, talkative little guy. He would play but was so tired. Again he seems better today so I'm not sure what was going on. He does have a bit of a runny nose so maybe he's fighting a virus of some sort.
Ok so back to FOOD...ha! Tonight we are having Pumpkin Waffles. They are DELICIOUS. I'm excited to make them again even though I find making waffles a pain in the you know what. But I guess in the long run it's worth it and having left-overs to freeze is even better :)! I hope Wee-one eats them tonight. He's eating better today (compared to yesterday) so here's hoping.
On Monday night we had Turkey Stew and biscuits for supper. The stew was SO GOOD! I shared my biscuit recipe on another post so if you want that one again just look at some of my old posts and you should be able to find it. However I didn't make them all fancy like on Monday. I just did plain ol' drop biscuits. They were still just as delicious. Here is the Turkey stew recipe:
Turkey/Chicken Stew
6 split chicken breasts or 1 sm. turkey breast
4 c. water
2 tsp. salt
6 potatoes
3 stalks celery
2 Tbsp. parsley flakes
1/4 c. milk
2 chicken boullion cubes
1 tsp. pepper
1 onion
6-7 carrots
3 Tbsp. corn starch
Simmer chicken with water, bouillon, salt, and pepper for an hour or until tender (turkey will take longer) (and on a side note I had LEFTOVER turkey in my freezer so I used that and just threw everything together in a pot, skipping that first step). Remove meat from pan. Add chopped vegetables, parsley, and simmer. Remove chicken from bones. Put chicken back in pot after vegetables are cooked, 30-45 minutes. Mix cornstarch with water; add to pot, stirring in gradually. Bring to a boil to thicken. (www.cooks.com)
Like I said I used leftover turkey and just threw everything in a pot, brought it to a boil, simmered it until vegetables were cooked, then added the corn starch. I boiled it again to thicken it and then turned it to low to just stay warm until supper. Turned out BEAUTIFULLY!

Heat oven to 350. Mix cream cheese, spinach, 1 c. mozzarella cheese and Parmesan until well-blended. Spread onto noodles. Roll up tightly.
Place seam side down in a 9 in. baking dish, top with sauce and remaining cheese.
Bake for 30 minutes or until heated through.
I also had some bread sticks (pre-made from the grocery store bakery...they were on the "day old" rack...yes I'm thrifty like that!) and I heated up some frozen corn. This is a wonderful, filling meal and OH SO DELICIOUS!!!

I'm BACK.....
I'm so sorry for being MIA the past few days. Ok so it's more then a few days...I just needed a few days to figure out my menu for the week. It sure was slow going. I don't know what the reason is for my lack of motivation. Some weeks I really feel like all I wanna cook is hotdogs and mac 'n cheese. Oh that would be so much easier and create a lot less dirty dishes...LOL! But I'm on a mission to feed my family healthy so I avoid that stuff like it's the plaque. I'm not saying hotdogs and mac 'n cheese are bad...I just don't make that for my family very often...it's a personal choice. Yet I'll feed them frozen pizza...go figure...LOL :)!!!!!
So what's on the menu for this week you might ask?! Well considering it's already Tuesday...but I digress. We did have a wonderful meal last night that was a hit with me and Hubs. Wee-one wasn't so sure about it. He apparently is in his "don't want to eat mode" this week. He ate so good the past week and now he's back at just taking a few bites and only wanting junk for snacks/meals. It's frustrating because I thought we had gotten over that hump. He must have been going through a grow-spurt or something last week when he was eating so well. I hope the rest of the week goes better :)!
